Brandi's Chicken

Several months ago we went to dinner at Dennis' brother and sister-in-law's house for dinner. My sister-in-law Brandi made the best dinner ever. It is a version of a meal from Cafe Rio if you are familiar and it is so yummy. Whenever I make it I call it Brandi's chicken. She has posted that recipe along with the dressing for it (you make a salad/burrito) on her blog, so I thought I would direct you all there so you can enjoy this delectable dinner as well. It has a super star rating for great taste and super easy!!! My kind of meal!!

THE GOAL

So, I have a problem. I like to cook, or I used to! But, I am a busy stay at home mom to 4 beautifully wild and precocious children. Now, the reason these children have sucked the love of cooking out of me is, well, because they don't really eat. Well, most of them anyway. By the age of 2 each one of my children thus far have quit eating normal food. Each night I cook dinner and I get to hear whines and cries and "eww, gross". We have had to establish rules where those such words and utterances are not allowed but still plates are left full of food. It is hard to be motivated when I slave to cook with kids under foot only to have a majority of the food go to waste. I have considered not providing my children with dinner, but could not find it in myself to deny them food! I decided I needed to re-motivate myself and find ways to make dinner time more pleasant. To my mind that meant:
1) to have something my husband and I at least enjoy eating
2) for it to be made fairly stress free (aka easy to make)
3) for it to be somewhat if not completely healthy

So that is the goal. I figured some of you might want to come along for the ride!!

Why Betty?

I have always enjoyed cooking. From a young age my mom encouraged me to cook and the first meal I made for our family was spaghetti. I felt so grown up to have prepared a meal of substance for our family. I also spent a lot of time with my Grandmother who taught me the basics of baking, to which I found my favorite outlet of the cooking realm; sweets!!

When I started dating my husband he worked nights at the Home Depot so I would cook meals and take them to him at work to eat together on his break. I always made dessert as well and shared with his co-workers. Soon, I became known at the Home Depot as Betty (you know, like Betty Crocker). I loved this nick name and relished in the idea I was good at something. Since then I have sent baked goods to each office my husband has worked in. While they don't all call me Betty, I am known for my yummy treats and often get requests. Maybe I will start charging one of these days!!
